Ε-polylysine is a microbiological food preservative with excellent antiseptic performance in natural preservatives. It is formed by the polymerization of 25 to 30 lysine residues, has a strong antibacterial ability, and can be used as a preservative for food preservation. The ε-polylysine has a broad antibacterial spectrum, and has certain antibacterial effects against Gram-positive bacteria, Gram-negative bacteria, yeasts, and molds in acidic and slightly acidic environments. ε-polylysine Gram-negative E. coli and Salmonella, which are not easily inhibited by other natural preservatives, have very good bacteriostatic effect, and they also have inhibitory effects on Bacillus thermotolerans and some viruses.
